Minne Red Velvet Keto Woopies! 😻❤️

Woopies Ingredients:
• 1 1/2 cups almond flour (available here)
• 1/4 cup coconut flour (available here)
• 2 tablespoons pure cocoa powder (available here)
• 1/2 teaspoon baking soda
• 1 teaspoon xanthan gum (available here)
• a pinch of salt
• 1/2 cup erythritol (available here)
• 2 eggs
• 1/2 cup softened butter
• 2 tablespoons almond milk
• 1/4 cup 14% sour cream
• 1 teaspoon vanilla
• Red coloring (around a teaspoon)

Cream Cheese Ingredients:
• 1 package of softened cream cheese
• 6 tablespoons of softened butter
• 3/4 cup powdered or granulated sweetener (available here)
• 1 teaspoon vanilla

Method :
Preheat oven to 375F. Prepare two baking sheets with parchment paper. In the mixing bowl, beat the butter and sweetener until creamy. Add the vanilla and eggs one by one and beat again for 3 minutes. Meanwhile, in a separate bowl, mix coconut flour, almond flour, xanthan gum, baking soda, salt and cocoa powder. Add the mixture of dry ingredients to the blender. Add sour cream, almond milk and red coloring last! (For the coloring go as you think, the mixture just needs to be very red) Add a tablespoon of mixture for each cookie, pressing a little (that gave me 20 in total, so 10 woopies finally). Cook for about 6-10min or until golden brown underneath but not too brown. Set aside and wait until they cool completely. During this time ; creaming! Beat cream cheese and butter until smooth and creamy. Add the powdered sweetener (or take granulated like me and grind it by hand). And add the vanilla. Place a good tablespoon of cream cheese between two cookies and enjoy! 🤪
