Ingredients :
- 2 large onions, cut into slices
- 1 cup crushed Quest Nutrition Protein Chips (Sour Cream & Onion flavor) for breading
- 1 scoop of unflavored isolated whey protein
- 2 large eggs
- 1 cup grated parmesan
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil spray
- For the topping: shredded cheddar cheese, crumbled bacon and sliced green onions
Preparation :
- Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
- In a shallow bowl, combine the crushed protein chips, whey protein isolate, paprika, garlic powder and a pinch of salt and pepper.
- In another bowl, beat the eggs until frothy.
- Dip each onion ring into the egg mixture, then coat them with the crushed protein chips.
- Place the coated onion rings on the prepared baking sheet in a single layer, making sure they are not touching for even cooking.
- Spray the onion rings with a little olive oil. This will help them get a golden color.
- Bake in the preheated oven for 15 to 20 minutes or until crisp and golden.
- Once cooked, quickly top with grated cheddar and return to the oven just long enough for the cheese to melt, about 2 minutes.
- Finish by sprinkling with crumbled bacon and green onions.
- Serve immediately with a side of keto-friendly sour cream or your favorite low-carb dipping sauce.
