A crispy keto chicken pizza crust base! 🍕

(makes a 10" pizza crust)

Ingredients :
• 280g roast chicken (or any other cooked chicken) boneless and skinless
• 1 egg (large size)
• 28g grated parmesan
• 1/2 tsp. teaspoon oregano
• 1/4 tsp. teaspoon of Greek spices from the Les Savoureux brand ( available here ) or other spices of your choice.
• salt * and pepper to taste
• 1 C. tablespoon of water (if necessary if the dough is too dry)

*Note: Be careful with salt (I don't add any). If you use store-bought chicken, it is often salted. Don't forget that parmesan is salty too.

*Add water in very small amounts only if the mixture is too dry like when using chicken breasts. The mixture should be damp but not wet and should hold together).

Instructions :

1. Preheat oven to 400F.
2. Line a 12" pizza pan with parchment paper and reserve another piece of paper for step 7.
3. Chop your chicken finely and place in a bowl.
4. Add the egg, parmesan and spices.
5. Mix everything with your hands as if making meatballs.
6. Add water (only if necessary)
7. Put the mixture on the pizza pan between the parchment paper and spread using a rolling pin.
8. Place in the oven for 10 to 15 minutes* or until the crust is dry, golden and crispy. Typically it will have shrunk from 12" to around 10".

* Monitor your crust. Cooking time may vary depending on the moisture content of the mixture.
