Ingredients :
- 1 ripe banana
- 1/4 cup shelled hemp seeds
- ⅔ cup water
- 1 ¾ cup almond flour
- ⅔ cup erythritol
- ⅓ cup unflavored whey protein powder
- ¼ cup coconut flour
- 2 teaspoons baking powder
- ½ teaspoon of salt
- 3 large eggs
- 1/4 cup organic coconut milk
- ½ cup melted butter
- ½ teaspoon banana extract (optional)
- ½ teaspoon vanilla extract
- Preheat the oven to 350 degrees F and well grease a long loaf pan, approximately 11 x 4 inches, or two smaller pans.
- Place the shelled hemp seeds in 2/3 cup of water. Put aside.
- In a large bowl, combine almond flour, erythritol, protein powder, coconut flour, baking powder and salt. Mix well.
- In another bowl, beat eggs, melted butter, hemp seed mixture, banana extract and vanilla extract and banana until well combined. Stir in the 1/4 cup of coconut or almond milk to thin the mixture to a soft consistency.
- Incorporate the dry mixture in 3 strokes.
- Spread the dough into the prepared pan.
- Bake for 60 to 75 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let cool in the pan for 20 minutes, then run a sharp knife around the edges to loosen. Continue to let it sit in the pan until it cools (about 20 minutes more). Unmold.
