Keto Lime and Avocado Mousse Cake - Keys Nutrition

This tangy keto lime cake will satisfy your taste buds! 💚

Crust Ingredients:
• 1 1/4 cup almond flour (available here)
• 1/4 melted butter
• 4 tablespoons of erythritol (available here)
• 1/4 teaspoon ground nutmeg

Method :
Brown the almond flour in a pan. Once golden brown, transfer to a bowl adding the melted butter, erythritol and ground nutmeg. Mix well and press into a springform pan. Place in the cold.

Lime Mousse Ingredients:
• 1 1/2 cup 35% whipping cream
• 1 package of cream cheese
• 3 medium lawyers
• 1/2 cup lime juice
• 3/4 cup erythritol (available here)
• 1 neutral gelatin sachet
• 1/4 boiling water
• Zest of a lime to decorate

Method :
In a food processor, whip the 35% cream into whipped cream and set aside in another bowl. In the mixer bowl, beat the cream cheese again with the ripe avocados and lime juice. Add the erythritol and mix again. Dilute the gelatin packet in boiling water and add to the cream cheese mixture! Add the whipped cream little by little, mixing gently. Pour over crust and refrigerate for at least 4 hours. Decorate with lime zest!
