You will fall in love with this low carb chocolate cheesecake recipe! 🤎


Chocolate crust ingredients:
• 1 3/4 cup almond flour (available here)
• 3 tbsp. tablespoon of pure cocoa powder (available here)
• 3 tbsp. tablespoon of erythritol (available here)
• 1/3 cup melted butter
• 1 C. teaspoon vanilla extract

Cheesecake and chocolate ingredients:
• 24 oz softened cream cheese
• 1 cup of Swerve powder (available here)
• 1 C. teaspoon vanilla extract
• 8 oz sugar-free dark chocolate (available here)

Method :
1. In a large bowl, combine the almond flour, cocoa powder and erythritol.
2. In another small bowl, combine the melted butter and vanilla. Add to dry ingredient mixture. Stir well, pressing with the back of a spoon or spatula until evenly combined. It should be crumbly but sticky enough that it can be sticky.
3. Place the mixture in the bottom of a springform pan. Mix the mixture evenly. Cool in the fridge.
4. Melt unsweetened chocolate in the microwave in alternating 30 seconds or in a double boiler on the stove and stir occasionally. Be careful not to overheat.
5. Meanwhile, use a hand mixer on medium-low speed to blend together the cream cheese, Swerve powder and vanilla extract until smooth and even.
6. When the chocolate has cooled, add it to the cheese mixture.
7. Transfer the filling to the crust and smooth with a spatula. Refrigerate for at least 2 hours.
8. Decorate with raspberries and sugar-free dark chocolate.
