Method :In a saucepan, heat a quarter of water with the erythritol for 3 to 5 minutes. Set aside and add the other ingredients. In a mason jar, add the previously pitted cherries and your syrup to within 1/4 inch of the rim. Screw well and leave to macerate for at least a week and a half in the refrigerator. After maceration, remove the cherries, keeping the syrup. Place the liquid in a pot with an additional 1/2 cup of erythritol, heat and stir until the sweetener is almost dissolved. Add the cherries and bring to a boil. Cover and reduce heat. Simmer for about twenty minutes or until the cherries are slightly dehydrated and firm. (you will see that the cherries will have a more transparent appearance) Remove from the heat and return to the mason jar. Enjoy with a good cocktail, on top of your favorite ice cream or simply to top off a keto cake! 🍹
