Keto Breakfast Casserole - Keys Nutrition

Here is THE keto version of a breakfast casserole with hollandaise sauce! 🥘

Ingredients Casserole:
- Meat of choice (sausage, bacon, ham...)
- 8 whipped eggs
- 2 cups of diced rutabaga or celery root (optional)
- Vegetables to taste (broccoli, peppers, green onions, spinach...)
- 1 1/2 cups of grated cheese of your choice
- Spices to taste (available here)
- Salt and pepper

Ingredients Hollandaise sauce :
- 4 egg yolks
- 2 tbsp. lemon juice
- 2 tbsp. water
- 1 cup melted and tempered butter
- salt and pepper

Method:
If you want rutabaga or celery root, cook your cubes in coconut oil, avocado oil (available here) or lard (Tenderflake) until the cubes are browned. Set aside. Preheat oven to 400F. In a skillet, cook your sausages and bacon. Set aside. In a separate bowl, whisk your eggs with the spice mixture of your choice. I suggest "Les Savoureux" brand sausage spices (available here online). In the bottom of a rectangular baking dish, add your cubes of rutabaga or celery root, then your chosen meats and vegetables. Add the cheese and egg mixture. Bake for about 45 minutes or until the egg mixture is cooked through. Meanwhile, prepare your hollandaise sauce. In the top part of a double boiler, off the heat, whisk together the lemon juice, water and egg yolks. Place over simmering water and whisk continuously until thick and frothy. Remove the bowl from the water bath. Remove from heat and whisk in butter in a thin stream, beating constantly with a whisk. Season with salt and pepper. Set aside at room temperature (put back on the double boiler for a few seconds, whisking just to warm up before serving). Take your feast out of the oven and add the hollandaise sauce. Enjoy! 🍽
