Here’s a low-carb recipe for tasty lemon squares! 🍋💛
Crust Ingredients:
• 2 cups almond flour or lupine flour (available here)
• 1/3 cup Swerve powder (available here)
• 6 tbsp. tablespoon of melted butter
• 1 C. tablespoon zest of one lemon

Method :
Preheat the oven to 350F. Prepare a square “Purex” type dish or any other square ovenproof mold with parchment paper. In a bowl, mix all the ingredients together well. Press into the bottom of the mold and bake for 10 minutes. To book.

Lemon Topping Ingredients:
• 1/2 cup Swerve powder (available here)
• 1/2 cup melted butter
• 1/2 cup lemon juice ( 5-6 lemons )
• 1/4 cup zest of one lemon
• 6 beaten eggs
• 1/2 tsp. teaspoon xanthan gum (available here)
• 2 tbsp. of unflavored collagen powder (available here) or 1/2 tsp. teaspoon powdered gelatin

Method :
In a medium saucepan, melt the butter. Remove from heat and add lemon juice, sweetener and zest. Mix well. Add the previously beaten eggs, whisk and return to the heat over low heat, whisking continuously and vigorously until thickened. ( you should not cook the eggs because there will be filaments of white ) Transfer your mixture into a bowl, adding the xanthan gum and the collagen and/or gelatin, mixing until homogeneous. Add to your crust. Bake for 15 minutes at 350F. Leave to cool completely in the refrigerator before cutting into squares ( 2x2cm ). Enjoy your meal! 💛
