Here's a low carb recipe for tasty lemon squares! 🍋💛

Ingredients Crust :
- 2 cups almond flour or lupine flour (available here)
- 1/3 cup Swerve powder (available here)
- 6 tablespoons melted butter
- 1 tbsp. zest of one lemon

Method:
Preheat oven to 350F. Prepare a square "Purex" type dish or any other square baking pan with parchment paper. In a bowl, mix all ingredients together. Press into the bottom of the pan and bake for 10 minutes. Set aside.

Ingredients Lemon Topping :
- 1/2 cup Swerve powder (available here)
- 1/2 cup melted butter
- 1/2 cup lemon juice (5-6 lemons)
- 1/4 cup zest of one lemon
- 6 eggs, beaten
- 1/2 teaspoon xanthan gum (available here)
- 2 tablespoons unflavored collagen powder (available here) or 1/2 teaspoon gelatin powder

Method:
In a medium saucepan, melt the butter. Remove from heat and add lemon juice, sweetener and zest. Mix well. Add the beaten eggs, whisk and return to the heat over low heat, whisking continuously and vigorously until thickened. (Do not cook the eggs as there will be strands of white.) Transfer your mixture to a bowl and add the xanthan gum and collagen and/or gelatin, stirring until smooth. Add to your crust. Bake for 15 minutes at 350F. Let cool completely in the refrigerator before cutting into squares (2x2cm) Bon appetit! 💛
