Chocolate Yule log

Ingredients : 

Chocolate cake 

  • 1 cup of almond flour
  • 4 tbsp. of melted butter
  • 3 eggs
  • ¼ cup of psyllium
  • ¼ cup of cocoa powder
  • ¼ cup of coconut or almond milk
  • ¼ cup of sour cream
  • ¼ cup of erythritol
  • 1 teaspoon of vanilla extract
  • 1 tsp. of baking powder (keto if possible)

Cheese topping

  • 1 cup of softened cream cheese
  • 8 tbsp. of melted butter
  • ¼ cup of sour cream
  • ¼ cup of erythritol
  • 1 tsp. of vanilla extract

 Chocolate frosting :

Preparation : 

Cake 

  1. Preheat oven to 350°F.
  2. Combine dry ingredients in a bowl and slowly add liquid ingredients. Mix well with a mixer.
  3. Spread dough on a parchment-lined cookie sheet. Bake for 10-15 minutes.
  4. While baking, prepare the cheese filling. Beat all ingredients together. Set aside.
  5. Let the cake cool, spread the cream cheese filling and roll up tightly.

Chocolate frosting

  1. Melt the chocolate and the coconut oil. Set aside.
  2. In a large bowl, beat the cream cheese. Stir in the powdered sweetener and the cocoa.
  3. Add the melted chocolate and the vanilla and beat until you obtain a smooth consistance.
  4. Add the cream, mix well and decorate your log!
