Keto Gingerbread cookies - Keys Nutrition

How about a low carb gingerbread flavored cookie recipe for Christmas? ⛄️

Cookie Ingredients :
- 2 cups almond flour (available here)
- 1/2 teaspoon xanthan gum (available here)
- 1/2 teaspoon baking soda
- 1 1/4 teaspoons ground cinnamon
- 1 1/4 teaspoons ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- Pinch of ground pepper
- 80g (5 1/2 tbsp.) soft butter
- 1/3 to 2/3 cup (to taste) Swerve brown sugar (available here)
- 1 egg

Method :
In a medium bowl, combine and mix all dry ingredients. Set aside. In a food processor, cream butter with sweetener until fluffy (about 8-10 minutes). Add the egg and mix again (the mixture will not be completely smooth and this is normal). Add half of the dry ingredients, mix and add the remaining flour. Shape the dough into a ball, wrap it in plastic wrap and refrigerate overnight or at least 3 hours. Preheat oven to 350F. Roll out the dough between two pieces of parchment paper and cut out your desired shapes. (Note that the thickness will largely determine the texture: thinner cookies will be much crispier, while thicker dough (especially if undercooked) will result in a softer dough). Place the shaped cookies on the prepared baking sheet and freeze for 10 minutes before baking. Bake for 10 to 20 minutes, until golden brown. Baking time varies greatly depending on the thickness and size of the cookies. Be careful. Let cool completely for 10 minutes. Store in an airtight container in the refrigerator for up to 5 days.

Ingredients Frosting :
- 250g softened cream cheese
- 1/4 cup softened butter
- 1/4 cup Swerve powder (available here)
- 1 tsp vanilla extract
.
Method :
Using food processor, beat cream cheese with butter until smooth. Add the Swerve powder on low speed. Blend again and finish with vanilla extract. Use a pastry bag to decorate your cookies. 🌟
