Pecan Keto Pie - Keys Nutrition

Ingredients Crust:
- 1/2 cup almond flour (available here)
- 1/4 cup coconut flour (available here)
- 1/2 teaspoon baking soda
- 6 teaspoons sweetener of choice (available here)
- 1/4 cup melted butter
- 1 beaten egg
- A pinch of salt
Grease and line a pie plate. Set aside. In a medium bowl, combine and mix flours and baking soda with sweetener and salt. Add the melted butter and previously beaten egg to the bowl. Mix and add to the bottom of the pie pan, pressing down. Set aside.
Ingredients Topping :
- About 1 1/2 cups pecans
- 2 1/2 tsp. melted butter
- 2 eggs, beaten
- 6 tsp. brown sugar Swerve (available here)
- 2/3 cup keto caramel spread (available here)
- Pinch of salt
Preheat oven to 350F. Using a whisk, vigorously whip all ingredients except pecans. Pour the mixture over the crust. Add pecans on top. Bake for 45 minutes to 1 hour or until the center is slightly soft.
