Ingredients Cake:
- 3/4 cup coconut flour (available here)
- 1 1/2 teaspoons baking powder
- 6 tbsp. erythritol (available here)
- Pinch of salt
- 2 tbsp. vanilla extract
- 3/4 cup cream cheese, softened
- 6 tbsp. melted butter
- 6 eggs

Ingredients Sauce :
- 1 cup homemade low-carb maple-flavored syrup (recipe here) or store-bought low-carb maple-flavored syrup (available here)
- 1 cup of Swerve brown sugar (available here)
- 1 1/2 cups of 35% cream
- 1/3 cup unsalted butter
- 1/4 to 1/2 tsp of xanthan gum (available here)

Method:
Preheat oven to 350F. Grease a deep square pan (to avoid spillage) and set aside. In a bowl, mix all dry ingredients together and set aside. Using a hand blender or food processor, whisk wet ingredients in another bowl. Add the contents of the dry ingredients to the flour mixture, mixing again. Transfer to your cake pan. For the sauce, heat the butter, Swerve brown sugar, maple flavoured syrup and 35% cream in a medium saucepan. Simmer for 20 minutes or until sauce is slightly reduced. Add the xanthan gum a little at a time (it should remain liquid), mix well and pour the sauce gently over the cake mixture. Bake for about 1 hour or until golden brown.
