Method :Preheat the oven to 350F. Grease a deep square mold (to avoid overflows) and set aside. In a bowl, mix all the dry ingredients together and set aside. Using a hand blender or food processor, whisk the wet ingredients in another bowl. Add the contents of the dry ingredients to the flour mixture, mixing again. Transfer to your cake pan. For the sauce, heat in a medium saucepan: the butter, theSwervebrown sugar, maple flavored syrup and 35% cream. Simmer for 20 minutes or until the sauce is slightly reduced. Add the xanthan gum little by little (it must remain liquid), mix well and pour the sauce delicately over the cake mixture. Cook for about 1 hour or until nicely browned.
