A delicious low carb blueberry bread recipe! đŸ«

Ingredients :

  • 3 large eggs
  • 2 cups almond flour (available here)
  • 2 tbsp. tbsp coconut flour (available here)
  • 1/2 cup blueberries
  • 1 1/2 tsp. teaspoon baking powder
  • 3 tbsp. tablespoon of cream 35%
  • 1/2 cup erythritol (available here)
  • 3 tbsp. tablespoons of melted/softened butter or coconut oil (available here)
  • 1 C. teaspoon vanilla extract
  • Lemon juice (optional)
  • Almonds and pecans to garnish

Method :
Preheat the oven to 350F. In a bowl, mix the dry ingredients and set aside. Using a mixer bowl, beat the liquid ingredients well and add the dry ingredients, continuing to stir until combined. Add the blueberries and mix by hand. Transfer to a loaf pan previously lined with parchment paper. Bake for 30 to 50 minutes, checking doneness with a toothpick. Leave to cool and unmold your bread. Enjoy with lots of butter! đŸ„°

Makes 12 slices.
