Instructions:

  1. Preparation of Ingredients: Prepare the shrimp by peeling and deveining them. Rinse and drain the konjac noodles. Finely chop the garlic and parsley.
  2. Cooking the Shrimp: Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and sauté the shrimp until they are pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
  3. Cooking the Sauce: In the same skillet, add the remaining olive oil and butter. Add the garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and heavy cream, stirring well to combine.
  4. Combining Ingredients: Add the rinsed konjac noodles to the skillet and mix well to coat them with the sauce. Stir in the Parmesan cheese until melted and well combined. Return the cooked shrimp to the skillet and mix gently.
  5. Seasoning and Serving: Season with salt, pepper, and red pepper flakes if desired. Cook for another 2-3 minutes until the sauce is thickened and everything is heated through. Garnish with fresh parsley if desired.

Notes:

  • This dish is perfect served as a light main course or a side dish.
  • Feel free to add other seafood like scallops or clams for variety.
  • For a richer flavor, you can substitute the chicken broth with seafood stock.

Enjoy!
