Here is a simple and delicious recipe for keto strawberry muffins! 🧁🍓

Muffin Ingredients:
2 cups of almond flour (available here)
• 1 C. teaspoon baking powder
• 3/4 cup erythritol (available here)
• 2 eggs
• 1 C. teaspoon vanilla extract
• 1/3 cup unsweetened almond milk
• 1/4 cup coconut oil (available here)
• 1 cup chopped fresh strawberries

Method :
Preheat the oven to 350F. Prepare a 12-cavity muffin pan with parchment paper cups. Put aside. In a bowl, combine and mix almond flour and baking powder. Using a food processor, beat the eggs with the vanilla extract and erythritol. Add dry ingredients, stir in unsweetened almond milk and coconut oil. Finish with the chopped strawberry pieces, mixing gently. Pour the mixture into the cavities of the mold and bake for around fifteen minutes. Let cool.

Ingredients Strawberry Frosting:
• 1 package of softened cream cheese
• 3/4 cup powdered Swerve (available here)
• 1 C. teaspoon vanilla extract
• 1/3 cup crushed strawberries or sugar-free strawberry jam (available here)

Method :
Using a food processor, beat cream cheese until creamy. Add the vanilla, Swerve powder and finish with the strawberry jam or crushed strawberries. Mix everything well, garnish the top of your muffins and enjoy. ❤️

Makes a dozen muffins.
