A delicious keto double chocolate muffin recipe to make in less than 25 minutes. đ€
Ingredients :
- 3 large eggs
- 1/2 cup almond milk
- 1 teaspoon of vanilla essence
- 1 cup almond flour (available here)
- 1/4 cup coconut flour (available here)
- 1/4 cup pure cocoa powder (available here)
- 1/4 cup sweetener (available here)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup avocado oil (available here)
- 1/3 cup sugar-free dark chocolate chips (available here)
Preparation :
- Preheat the oven to 325F and prepare the muffin cups in a 12-cavity mold.
- Using a food processor, beat the eggs, almond milk and vanilla essence.
- In another bowl, mix the flours, cocoa powder, sweetener and baking powder. Add to other ingredients until smooth.
- Add the avocado oil and mix again.
- Add the chocolate chips and mix by hand. (keep some for finishing the top of the muffins)
- Divide 3/4 of the molds into the muffin cups (this gave me 11 muffins) . Add the remaining nuggets on top of the mixture before baking.
- Cook for 22 to 25 minutes, check doneness with a toothpick and let rest for a few minutes before serving.
