Same taste, same little sweetness! Here is a recipe for keto vanilla crème brûlée. 🌸
Ingredients :
• 2 cups of 35% cream or coconut cream (available here)
• 5 egg yolks
• 6 tbsp. tablespoon of erythritol (available here)
• A pinch of salt
• A vanilla pod or 2 tbsp. teaspoon vanilla extract

Method :
Preheat the oven to 300F. In a medium saucepan, heat the 35% cream ( or coconut cream ) over low heat with a pinch of salt. Cut the pod, using the blade of the knife remove the vanilla seeds, put everything (including the pod) in the hot cream, stir to infuse the flavors for a few minutes. Meanwhile, in a medium bowl, whisk the yolks and erythritol until white. Remove the pod. Pour your hot cream into the bowl of yolks, whisking continuously ( we want to avoid cooking the yolks ). Prepare a deep plate with Silpat brand silicone paper at the bottom ( you can use a hand towel if you don't have one ) Pour your hot cream into 4 ramekins. Place them on the plate and add water to the bottom of it to reach halfway up the ramekins. ( the best technique for a perfect crème brûlée! 😉) BE CAREFUL not to put water in your crème brûlées. Bake for about 35 minutes or until the center is slightly soft. Place in the refrigerator for at least 2 hours. ( ideally overnight ) Sprinkle your crème brûlées with granulated erythritol, broil in the oven or use a blowtorch to caramelize the top! 🥰
