  1. Heat your oven to 355 F.

  2. Melt the mozzarella in the microwave (approximately 90 sec-2 min).

  3. Add the almond flour, psyllium husk and salt and spices, if using. Stir until combined, then knead until smooth.

  4. Separate the dough into 2 balls and spread it between 2 sheets of baking/parchment paper. Spread as thinly as possible! The thinner your tortilla chips are, the crispier they will be.

  5. Cut into triangles (used a pizza cutter) and spread them on a sheet of parchment paper so that the tortillas do not touch each other.

  6. Cook 6-8 minutes or until edges are golden brown. Cooking time will depend on the thickness of your tortillas.
