Ingredients:

2 cups (200 g) grated mozzarella

¾ cups (75g) almond flour

2 tablespoons of psyllium

pinch of salt

¼ tablespoon seasoning of choice (optional)
Instructions :

Heat your oven to 355 F.

Melt the mozzarella in the microwave (approximately 90 sec-2 min).

Add the almond flour, psyllium husk and salt and spices, if using. Stir until combined, then knead until smooth.

Separate the dough into 2 balls and spread it between 2 sheets of baking/parchment paper. Spread as thinly as possible! The thinner your tortilla chips are, the crispier they will be.

Cut into triangles (used a pizza cutter) and spread them on a sheet of parchment paper so that the tortillas do not touch each other.

Cook 6-8 minutes or until edges are golden brown. Cooking time will depend on the thickness of your tortillas.
