Preparation :

  1. Preheat the oven to 350F.

  2. To make the cookies, mix the egg, pinne butter and erythritol.

  3. Form small balls the size of a golf ball.

  4. Place the balls on a cookie sheet covered with parchment paper.

  5. Tenderly crush each biscuit, preferably with a clean fork.

  6. Bake the biscuits for 12 min. Leave to cool for 15 mins.

  7. For the ganache, combine all the remaining ingredients in a saucepan and cook in a bain-marie, gently stirring the base and the mixture for 2 minutes. To book.

  8. Take a biscuit in one hand and a butter knife in the other then begin to spread the ganache on said biscuit. Add a biscuit on top. Drop in, repeat then lick off any remaining ganache.

  9. Enjoy as a sandwich or one layer at a time!
