Here is a recipe for succulent Parmesan chicken wings made with organic virgin coconut oil.
Ingredients:
- 24 chicken wings
- 15 ml of tabasco
- 250ml grated parmesan
- 15 ml finely chopped fresh coriander
For the marinade
- 15 ml of organic virgin coconut oil
- 5 ml sweet smoked paprika
- 5 ml lime juice
- 2.5 ml cayenne pepper
- 1 clove of garlic, finely chopped
- salt and pepper
Preparation:
- In a bowl, mix the marinade ingredients
- Place the chicken wings in a waterproof bag. Add the marinade and stir to coat the wings well with the marinade. Seal the bag and leave to marinate for 1 hour in the fridge.
- When ready to cook, preheat the oven to 190C (375F)
- Place the wings on a baking sheet lined with parchment paper. Bake for 20 to 25 minutes, turning the wings halfway through cooking.
- Meanwhile, mix the tabasco with the parmesan and coriander in another bowl.
- Remove the wings from the oven. Brush the wings with the parmesan mixture.
- Adjust the oven to 205C(400F)
- Continue cooking in the oven for 15 minutes, until the inside of the flesh has lost its pink tint.
