Instructions :
Prepare Pork Rinds: Crush Pork King Good Pork Rinds into small pieces using a food processor or sealed bag and rolling pin.
Melt the chocolate and butters: In a microwave-safe bowl, combine the sugar-free dark chocolate chips, almond butter and unsalted butter. Heat in short bursts, stirring until the mixture is smooth.
Add vanilla: Stir vanilla extract into melted chocolate mixture.
Combine with Pork Rinds: Pour melted chocolate mixture over crushed Pork Rinds. Toss gently until everything is evenly coated.
Coat with sweetener: In a large Ziploc bag or bowl, add the powdered erythritol. Add the chocolate coated Pork Rinds and shake or stir until well coated.
Optional Coconut Addition: If using, add unsweetened shredded coconut and stir again until evenly distributed.
Let set: Spread the coated Pork Rinds on a tray lined with parchment paper. Leave to set for at least 30 minutes for the chocolate to harden.
Serve: Once set, transfer to a serving bowl or individual portions and enjoy!
