Soft, decadent and by far the best keto blueberry chocolate chip muffins! 🧁🫐
Ingredients :
- 2 1/2 cups almond flour (available here)
- 1/3 cup erythritol (available here)
- 1 teaspoon baking powder
- 1 teaspoon xanthan gum (available here)
- 1 tablespoon of lemon juice
- 1/3 cup almond milk
- 1/2 cup melted butter
- 4 tablespoons of 14% sour cream
- 4 eggs
- 1 tablespoon vanilla extract
- 1 cup fresh or frozen blueberries.
- About 1/2 cup sugar-free dark chocolate chips (available here)
Method :
Preheat the oven to 350F. In a bowl, mix the flour and dry ingredients. Set aside and do the same separately with the wet ingredients. Mix them alternately. Add the blueberries and sugar-free dark chocolate chips. Pour into a 12-cavity muffin pan. Bake for about 30 minutes, checking doneness with a toothpick.
Makes 12 muffins.
