Keto Chocolate Chip and Blueberry Muffins - Keys Nutrition

Soft, decadent and by far the best keto blueberry chocolate chip muffins! đŸ§đŸ«

Ingredients :

  • 2 1/2 cups almond flour (available here)
  • 1/3 cup erythritol (available here)
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum (available here)
  • 1 tablespoon of lemon juice
  • 1/3 cup almond milk
  • 1/2 cup melted butter
  • 4 tablespoons of 14% sour cream
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 1 cup fresh or frozen blueberries.
  • About 1/2 cup sugar-free dark chocolate chips (available here)

Method :
Preheat the oven to 350F. In a bowl, mix the flour and dry ingredients. Set aside and do the same separately with the wet ingredients. Mix them alternately. Add the blueberries and sugar-free dark chocolate chips. Pour into a 12-cavity muffin pan. Bake for about 30 minutes, checking doneness with a toothpick.

Makes 12 muffins.
