Ingredients Cake batter:
• 1 1/4 cup almond flour (available here)
• 1 C. teaspoon baking powder
• 1/2 tsp. xanthan gum (optional) (available here)
• 1/4 tsp. teaspoon of salt
• 4 tbsp. tablespoon of softened butter
• 1/3 cup erythritol (available here)
• 1/3 cup cream cheese
• 1 C. teaspoon vanilla extract
• 4 eggs

Ingredients Vanilla Buttercream:
• 1/2 cup softened butter
• 1/4 cup Swerve powder (available here)
• 1/2 tsp. teaspoon vanilla extract
• 1 C. tablespoon of cream 35%
*Note: You can double the recipe if your cake has two layers and you want to add more buttercream decorations.
Assembling the cake or cupcakes:
For a cake, you can cut your dough in half, place buttercream between the layers and ice your cake like this or simply cream it as is (add decoration with buttercream or fruit if desired) For cupcakes, the ideal is to use a bag with a large fluted tip for a pretty “rosasse” pattern, otherwise cream to your liking! 👩🍳
