Ingredients for the Cake:
• 3 cup almond flour (available here)
• 3/4 cup pure cocoa powder (available here)
• 2 tbsp. tablespoon of baking powder
• 1/2 tsp. teaspoon of salt
• 2/3 cup water or sugar-free almond/coconut milk
• 6 eggs
• 2/3 cup erythritol (available here)
• 3 tbsp. teaspoon vanilla extract

Icing Ingredients:
1/2 cup keto maraschino cherries ( recipe here )
• 2 cups of 35% whipping cream
• 1 cup mascarpone cheese
• 1/2 cup Swerve powder (available here)
• 1 C. teaspoon vanilla extract

Assembling the Cake:
With a first dough, spread your cherry jam well. Add a generous layer of whipped topping and add a layer of cake batter. Add the rest of the whipped cream, decorating to your liking! 🍒
