Ingredients :
- 1 tbsp. chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tsp. salt
- 1 tsp. pepper
- 8 eggs
- 1 tsp. olive oil or avocado oil (available here)
- 1/2 lb. ground beef, medium-lean
- 1/2 cup low carb salsa
- 1 green bell pepper, diced
- 3 green onions, chopped
- 1 cup shredded cheddar cheese

Method :
Preheat oven to 375F. In a bowl, mix all dry ingredients and set aside. In a second bowl, whisk the eggs and set aside again. In an ovenproof skillet, cook ground beef with olive or avocado oil. Add the spice mixture and stir well. Add diced peppers and salsa. Cook for a few minutes and combine the egg mixture and green onions. Cover with cheese and bake for about 30 minutes.

Makes 4 large portions. (you can easily divide it into 6 servings)
