Method :In a medium saucepan, heat all the strawberry sauce ingredients over medium heat for about 5 minutes (the mixture will thicken slightly). Cool completely. For the ice cream, beat the cream cheese until creamy. Add your sweetener and continue mixing. Add the cream, lemon juice and vanilla, mixing again for about 3 minutes more. Transfer to an airtight rectangular freezer-safe dish. Add the strawberry sauce, mix the two flavors for a “strawberry swirl 🍓” appearance. Freeze the mixture for at least 2 hours before serving.

Ice cream ingredients:
• 8 oz softened cream cheese
• 2 cups of 35% whipping cream
• 3/4 cup sweetener of your choice* (available here)
• 1/2 tsp. teaspoon vanilla extract
• 1/2 tsp. teaspoon vanilla extract
• The juice of a lemon

* Xylitol and allulose are good choices to keep your ice cream soft when frozen. Otherwise plan to take it out a little in advance before tasting.

• 2 tbsp. tablespoon of butter
