Keto “Oreo” Cookies – Keys Nutrition

Here is a recipe for “Oreo” cookies in a keto version. 🤎

Cookie Ingredients:
1 1/2 cup almond flour (available here)
• 1/3 cup pure cocoa powder (available here)
• 1 C. tablespoon of baking powder
• 1 egg
• 2 tbsp. tablespoon of melted coconut oil (available here)
• 1/2 cup erythritol (available here)
• 1 C. teaspoon vanilla extract
• A pinch of salt

Method :
Preheat the oven to 350F. Mix all the ingredients. Make a sausage. Wrap it in transparent paper and freeze for 30 minutes. When thoroughly cooled, cut into 24 1/4-inch-thick cookies. Bake for twelve minutes. Cool.

Icing Ingredient:
1 cup softened butter
• 1 cup of Swerve powder (available here)
• 3 tbsp. tablespoons of unsweetened coconut milk/cream (available here) or 35% cream
• 1/2 tsp. tablespoon of vanilla extract
.
Method :
Using a mixer or food processor, mix everything well, adding the coconut cream or 35% at the very end. Use a pastry bag, fill with your icing and form your cookies into sandwiches. Enjoy! 😛
