- Preparation of Ingredients: Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper. Measure out all the ingredients as listed.
- Mixing the Dough: In a large bowl, combine the almond flour, shredded coconut, baking soda, and salt. In a separate bowl, whisk together the eggs, melted coconut oil, almond butter, vanilla extract, and erythritol until smooth.
- Combining Ingredients: Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the dark chocolate chips.
- Shaping the Cookies: Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, flattening them slightly with your hand or a spoon.
- Baking: Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

- These cookies can be customized with other mix-ins like nuts or dried fruit.
- For a different flavor, try using different extracts like almond or coconut.
- To make the cookies more festive, add a pinch of cinnamon or nutmeg to the dough.
- Enjoy!
