Ingredients :
1/2 cup softened butter
• 1/2 cup Keys Nutrition Erythritol (available here)
• 1/2 tsp. teaspoon vanilla extract
• 1 large egg
• 1 1/2 cup almond flour (available here)
• 1/2 tsp. teaspoon baking powder
• 1/2 tsp. teaspoon xanthan gum (available here)
• 1/4 tsp. teaspoon of salt
• 1/2 cup sugar-free dark chocolate chips (available here)

Method :
Preheat the oven to 350F. In a bowl, mix all the dry ingredients except the chocolate chips. To book. In the bowl of a food processor, cream the butter and erythritol. Add the vanilla and egg. Add the bowl of dry ingredients and finish with the sugar-free dark chocolate chips. On a baking sheet lined with parchment paper, place cookie balls, crushing them and spacing them out. Cook for twelve minutes. Let cool completely before removing from the baking sheet.

Makes 12 cookies.
