Method :Preheat the oven to 350F. In a bowl, mix all the dry ingredients except the chocolate chips. To book. In the bowl of a food processor, cream the butter and erythritol. Add the vanilla and egg. Add the bowl of dry ingredients and finish with the sugar-free dark chocolate chips. On a baking sheet lined with parchment paper, place cookie balls, crushing them and spacing them out. Cook for twelve minutes. Let cool completely before removing from the baking sheet.
