Before you begin

Important: Measure the psyllium husks before grinding them to ensure the correct texture. If you are already using ground psyllium, weigh it and make sure it is very fine.

An electric mixer or blender is highly recommended for this recipe.

Method

  1. Prepare the oven and the mold

    • Preheat oven to 175°C (350°F) .

    • Oil a bread pan (for a loaf) or a cookie sheet (if you're using rolls).

  2. Mix the dry ingredients

    • In a large bowl, combine all powders and dry ingredients.

  3. Incorporate the liquids

    • Add the egg whites and cider vinegar.

    • Mix for a few seconds using an electric mixer.

  4. Add boiling water

    • Pour the boiling water directly into the bowl.

    • Mix immediately with a mixer until the batter thickens and becomes smooth.

  5. Shape and cook
    • For a loaf: Transfer the dough to the prepared pan and place in the center of the oven. Bake for 75 to 90 minutes , until the bread is golden brown and cooked through.

    • For panini rolls: Divide the dough into 16 equal portions , roll them into balls and place them on a baking sheet. Bake for 60 to 75 minutes .

  6. Cool and enjoy
    • Allow the bread to cool completely, at least 30 minutes , before slicing.
