Ingredients :
  • 4 boneless chicken breasts or chicken thighs
  • 4-6 shallots
  • 1 small container of tomato paste
  • 1 cup of 35% cooking cream or unsweetened coconut cream (available here)
  • 6 tbsp. tablespoon of butter

Spices :

  • Salt and pepper
  • 2 tbsp. chili powder, divided in half
  • 1/2 tsp. 1 teaspoon turmeric powder
  • 3 tbsp. teaspoon garam masala
  • 1 C. teaspoon cumin
  • 1 C. cayenne pepper
  • 1 C. tablespoon of ginger powder
  • 3 tbsp. teaspoon garlic powder
  • 7 cinnamon sticks 7 cm
  • 1/2 tsp. xanthan gum (available here)

Preparation :

1. Marinate the cubed breasts in 1 tbsp. chili powder, turmeric and salt and pepper. Leave to rest for 15 min.

2. Melt the butter and cook the chicken cubes in 2 tbsp. of butter over medium heat, then remove and set aside.

3. Melt 2 more tbsp. of butter over medium heat, add the shallots, garlic, garam masala, ginger, cumin, cayenne, cinnamon, salt, pepper and add the remaining chili powder. Cook until the mixture is fragrant.

4. Add the tomato paste and cream, add the mixture and bring to the boil. Turn the chicken and simmer over low heat for 10 to 15 minutes, then add the remaining butter and xanthan gum to thicken.
