Ingredients:

35g of salted butter

95g almond flour

½ egg

½ teaspoon xanthan gum

¼ teaspoon baking powder

Pinch of salt

Any bagel seasoning (to taste)
Instructions :

Melt butter in a small bowl until melted. Let cool while you mix the flours.

Add the almond flour, xanthan gum, baking powder and salt to a medium bowl and whisk well. Pour in the butter and mix with your hands until evenly distributed.

Add your lightly beaten egg and continue to knead until it forms a ball. Cover with cling film and place in the freezer for 5 minutes to solidify the butter.

Spread the dough between two sheets of parchment paper, sprinkle with seasoning and roll again lightly to press it in.

Cut crackers to desired size and carefully separate them.

For medium-sized crackers, bake at 350F on parchment paper for about 8 to 12 minutes, until lightly browned.
